Moroccan Lamb Burgers with Monsieur Fromage
  • 1 3/4 lbs. lean ground lamb
  • 1/2 cup pitted Kalamata olives, chopped
  • 1/4 cup chopped fresh mint
  • 1 Tbsp. fresh grated lemon zest
  • 1 1/2 tsp. ground cumin
  • 1/4 tsp. ground allspice
  • 3/4 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 8 oz. Monsieur Fromage cheese, sliced 1/4" thick
  • 4 medium whole wheat pitas
  • 1/2 medium English cucumber, thinly sliced
  • 1/2 cup hummus, plain or flavored
  1. Preheat grill or grill pan over medium-high heat. Oil grates right before using. In a large bowl, mix together lamb, olives, mint, lemon zest, cumin, allspice, salt and pepper just until combined. Shape into 6 patties, about 4" in diameter.
  2. Grill burgers 5-7 minutes per side or until just cooked through (internal temperature should read 160°F on instant read thermometer). Top with sliced Monsieur Fromage, turn off heat and let stand 2-4 minutes until cheese just begins to soften.
  3. Cut off 1" from each pita. Spread 11/2 Tbsp. hummus on bottom half of each pita. Arrange cucumber slices over hummus and top with burgers.
